The founding chef/owner is European trained Roy Yamaguchi. Roy has more than 30 locations in the United States and internationally. Each restaurant features its unique creations along with Roy's signature originals. The menu is cutting edge Hawaiian fusion cuisine, focusing primarily on the freshest fish and seafood, along with several excellent Angus beef selections. Executive Chef/Managing Partner Ryan Leto is the genius behind the food at Roy's, 620 E Flamingo, transferring to Roy's Las Vegas in February 2003. The mastermind of the cuisine at Roy's, 8701 W Charleston is Chris Falconer, Executive Chef/ Managing Partner. Chef Chris has been with Roy's since 1998 opening the Roy's in Palm Springs, Tampa and Hawaii. He transferred to Las Vegas in 2000. Both trained with Roy Yamaguchi. Their intense passion and vast culinary knowledge shine brilliantly in the menu, which is prepared daily. Guests' wishes and special requirements are also welcomed. "I will cook dishes not listed on the menu, prepare special requests, and create any desired combination to please my guests" quotes Chef Ryan.

Brandon Konishi, the enormously talented sushi chef at Roy's on Flamingo, produces an impressive array of Yamaguchi sushi and sashimi (featuring Hawaiian seafood), Nigiri sushi (Japanese style) and sizzling sashimi. A canoe appetizer for two offers a wonderful assortment of appetizers ranging from Panko Crisped Spicy Salmon Avocado Rolls, Szechuan Baby Back Ribs, Edamame Blackened Island Ahi Tuna, to Luau Teriyaki Chicken Spring Rolls. The Steamed Lobster Shu Mai Dumpling with watercress and shiro miso furikake fusion and the Da Kine Ahi Poketini (fresh ahi) are fantastic appetizers. Poke is comfort food in Hawaii.
The Gorgonzola Fiji Island Walu is an outstanding fish entree, featuring walu on a bed of whipped potatoes, topped with smoked bacon, seared gorgonzola, with a complimentary champagne spinach cream. Sweet caramelized Hawaiian Misoyaki Butterfish, marinated in miso, sake, and sugar, melts in your mouth. What an incredible taste! Try a few of the many other choices such as Grilled Salmon with Japanese Citrus Ponzu Sauce, Roy's Blackened Ahi Tuna, and Roasted Macadamia Crusted Whitefish in Lobster Butter Sauce.
